Super Easy Blueberry Cupcakes/Muffins These muffins and or cupcakes are so easy, all you need is a bowl and a wire. No cake mixers required. They are seriously so easy for your little one to make. Makes: * Eight large-topped, bakery-sized muffins * Ten regular-sized blueberry cupcakes * Twenty to twenty-two mini blueberry cupcakes Ingredients – 1 1/2 cups (195 grams) all-purpose flour – 3/4 cup (150 grams) ) sugar, plus 1 tablespoon for muffins – 1/4 teaspoon fine salt – 2 teaspoons baking powder – 1/3 cup (80 ml) neutral flavored oil. Canola, greens and grape seeds are great – 1 large egg – 1/2 cup (120ml) milk. dairy and non-dairy both work – 1 1/2 tsp vanilla bean paste or extract – 220g fresh or frozen blueberries. (if using frozen, add frozen so they don't thaw) about 1 cup) **Optional, extra sugar to sprinkle tops before baking. Instructions * Preheat the oven to 200 degrees Celsius. *For large-top muffins, line 8 regular-sized muffin cups with paper liners. For regular sized cupcakes, line 10 cupcakes. * In a bowl, mix all the wet ingredients and beat. Then add all the dry ingredients to the wet mixture. * Mix until the end but not on top. Fold in the blueberries. * Divide batter between muffin cups. (If you are making muffins with a large top, the batter will come to the top of the paper liners). *Bake muffins for 15 to 20 minutes (mini cupcakes 9-11 minutes) or until tops are no longer moist and a toothpick inserted into the center of a cupcake comes out with crumbs, not wet batter. Transfer to a cooling rack. To store, place in a plastic bag, seal, and store at room temperature for 2 to 3 days. To freeze them, wrap them tightly in cling film or place them in freezer bags.
