A Very Humble Tomato Spaghetti More often than not, it's actually the simplest foods with a humble ingredient list that turn out to be some of the most delicious heart-winning dishes. This pasta is just that! Humble in ingredients, super super easy to make and I guarantee everyone will love it. Serve it on its own with a protein of your choice and a salad. Serves 3-5 depending on your portion Ingredients – 2 large cloves of garlic – 1 fresh red chilli – 1 bunch fresh basil (all for the pasta sauce) plus extra leaves for garnishing dishes (optional) – 300g dried spaghetti – olive oil (a good quality and generous amount of about 1/4 cup) – 1 x 400g tin of quality plum tomatoes – 2 tbsp butter (optional) – Freshly grated good quality Parmesan cheese for over plated spaghetti. – Salt – Pepper Directions 1. Peel and chop the garlic and chili (halve or in my case 1/4 of the chili and deseed if you don't want the sauce too hot). (My three year old and 1 year old ate it with no problem, it just added flavor) 2. Pick the basil leaves from the stalks and put them to one side. Chop the stalks. 3. Cook the spaghetti in a large pan of boiling salted water according to package directions. 4. In the meantime, put a large saucepan on medium heat and add the oil. Add the garlic, chilli and basil stalks and stir. 5. When the garlic begins to brown slightly, add most of the basil leaves and canned cherry tomatoes. Increase the heat and stir for 2 minutes. Taste and sprinkle with sea salt and black pepper. 6. Drain the spaghetti, reserving a cup of the cooking water, then transfer to the pan with the sauce if needed and toss well, then taste and season with salt and pepper. 7. Serve in bowls 8.
