Healthy refined sugar-free oatmeal lemon and poppy seed cupcakes with healthy frozen yogurt. It's so easy my little one made these. Makes 12 cupcakes or 24 mini cupcakes Ingredients -2 & 1/4 cup oat flour. You can make it yourself by processing oats until they are very fine like flour. -1 teaspoon baking powder -1/2 teaspoon baking soda -1/4 teaspoon salt -2 eggs -1/3 cup maple syrup -1/3 cup coconut oil, melted or neutral oil such as grape seed or vegetable oil -1/4 cup lemon juice -1 teaspoon vanilla -2/3 cup Greek yogurt (I used jalna) -1 tablespoon lemon zest -1.5 tablespoon poppy seeds Healthy frosting -1:2 ratio of yogurt to philadelphia cheese, honey of your choice and some vanilla bean paste. So 1 cup yogurt to 2 cups Philadelphia cream cheese. Cheese (Philadelphia cheese) Directions – Preheat the oven to 180 and line a cupcake tin or spray generously to prevent it from sticking to the pan. I used my mini cupcake pan. -In a small bowl, mix together the oat flour, soda, baking powder and salt. Set aside. - Beat the eggs in a large bowl. Add the maple syrup, coconut oil, lemon juice and vanilla. Then add the yogurt. -Add the wet ingredients to the dry until well combined, then stir in the lemon zest and poppy seeds. Fill cupcake liners 3/4 full and bake in oven for 15-17 minutes or until a toothpick inserted comes out clean. -For mini cupcakes it's about 10 minutes, but I didn't time mine, so check with a toothpick at around 8 minutes. -While baking, make frosting by mixing all the ingredients together and whisking together. Once the cupcakes are completely cooled, spoon a sweet frosting mixture over the top and melt. Store in the fridge and enjoy in 5 days or freeze without frosting for later. Enjoy. Once the cupcakes are completely cooled, spoon a sweet frosting mixture over the top and melt. Store in the fridge and enjoy in 5 days or freeze without frosting for later. Enjoy. Once the cupcakes are completely cooled, spoon a sweet frosting mixture over the top and melt. Store in the fridge and enjoy in 5 days or freeze without frosting for later. Enjoy. .
