Donut pancakes with strawberries, blueberries, sprinkles and black shock chips. I have two little ones and they both love pancakes. I try to make things interesting and look different instead of making the same old standard piklet/pancake. My pancake recipe turns out so incredibly soft that it literally melts in your mouth. INGREDIENTS * 1 cup of sifted plain flour * 2 tablespoons of baking powder * Pinch of salt * 2 tablespoons of white sugar * 1 cup of buttermilk * (If you don't have buttermilk, add 1 tablespoon of vinegar to 1 cup of whole milk and let it sit set aside for 5 minutes (ignore if you have buttermilk) * 1 large egg, beaten * 2 tablespoons unsalted butter, melted * 1 teaspoon pure vanilla extract * Optional toppings, diced strawberries, blueberries, sprinkles or black choc chips. Directions * Preheat oven to 170C * Prepare donut pan, spray tray generously with cooking oil * Sift all dry ingredients into a bowl and mix, set aside. * In another bowl, mix all the wet ingredients and beat well. * Add the dry ingredients to the wet ingredients and mix until just combined, but do not over mix.
The more you mix the more gluten will come out causing a tougher texture. * Pour the batter into the donut pan by 3/4 and bake at 170 degrees for 7 minutes or until set. You can do a skewer test. * Once cooked, let it rest for 10 minutes. Remove the pancake from the tray to a cooling wire. * Optionally, you can drizzle some cream cheese frosting over the tops. Enjoy
