Ingredients – For the dough * 420 g flour (for all purposes) and more for sprinkling * 50 g icing sugar * 50 g brown sugar * 1 teaspoon salt * 2 1/4 teaspoon instant yeast * 1 teaspoon sweet cinnamon * 1 pinch of nutmeg optional * 1 large egg, room temperature * 120 ml milk * 1 tablespoon vanilla paste or extract * 120 g cream or plain yogurt * 85 g unsalted butter Filling * 60 g unsalted butter * 2 tablespoons tablespoons of brown sugar * 3 tablespoons of brown sugar * 1 tbsp. cinnamon 120 g * 30 grams of butter * 1 tablespoon of vanilla bean paste or extract * 1 pinch of salt * 1 teaspoon of lemon juice * 200 grams of caster sugar * 1 tablespoon of milk and more if needed for consistency Instructions Cinnamon Sugar: Mix two sugars , mix and set aside Rolls: – Add the flour, salt, spices, sugars and yeast to the bowl of your mixer then whisk together to combine and set aside. - In another bowl, add the milk, butter, vanilla and cream.
